How are you all doing? I am not as motivated as I wish I was, but I do keep thinking about having to step on the scale on Saturday morning! Yikes!
I thought we could share some meal ideas. I will post one below. If you have one to share, just make a comment and include your recipe or meal idea. I know I need some new ideas to get me going!
Chicken Stroganoff
Mix together in a crockpot:
16 oz fat free sour cream
1 can low fat cream of mushroom soup
1 packet onion soup mix
Add 4 frozen chicken breasts
Cook on low for 6-8 hours.
Serve over brown rice or whole wheat noodles. Yummy and easy!

Salmon with Orange Marmalade
1/2 cup orange marmalade
2 T soy sauce
2 garlic cloves,minced (I use the canned already minced)
1 (1 1/2 #) salmon fillet ( I use the individually frozen ones from Aldi)
1/4 tsp salt
Preheat oven to 400. Whisk together first 3 ingredients. Place salmon on rack of broiler pan lined with foil. Sprinkle fish with salt. Spread 1/2 of marmalade mixture over fish. Bake at 400 for 18 min or until fish flakes. Remove from oven. Spread remaining mixture evenly over fish. Broil for 3 min or until topping browns. Yield: 4 servings.
I didn't even think I liked salmon until I had this recipe- now I love it! It's great served with wild rice & a salad. Enjoy!

made it last night but substituted w/ stuff in the closet - appricot preserves and put it on the grill. Turned out great....

Here's a soup recipe I use a lot. It is very filling, especially served with some crusty 100% whole wheat bread. I do a couple things different though.
1) Do not use half and half or heavy whipping cream. I have made this with 1% milk and it tastes awesome still!
2) I use two boxes of Rice-a-Roni wild rice instead of one of Uncle Ben's. The boxes are smaller, so two are needed - the flavor is just better!
3) I add in a little onion powder, garlic powder and salt to taste in the end.

Loved the salmon!! So did my husband. I will definitely be making it again. Did you thaw the fish before you baked it? I started with it frozen and I wondered if it would be even better if I had thawed it first.

Here is a breakfast idea:
BIG bowl of oatmeal
Put 1/2 cup quick cooking oats, a little salt, 2 Splenda, cinnomen, 1 cup Blue Diamond Unsweetened Vanilla Almond Milk, & 1 cup of water in a saucepan. Cook on medium stirring occasionally. I just cook it until it is the consistancy I want it. It probably takes 15 minutes. I then add 2 more Splenda (I like it sweet.) and 2T of PB2.
It is great when you feel like you need a lot to eat and something to stick to your bones.
PB2 is a powdered peanut butter. I find it at HyVee.
